My canon sd750 does so I'm sure the very similar SD1000 does. When set to take a photo, press the center button in the dial (func set) for the photo settings options. Select manual. Then scroll down the left side to my colors (the one under awb that looks like a baby bottle). Scroll through the my colors choices. One of them is BW, black & white. There's also sepia for old fashioned yellowed. To scroll use the different sides of the circular dial. You're buttons and orders might be a little different on the 1000 than the 750, but the functions tend to be the same from canon to canon.
